Double up on vegetables by mixing greens into your dip, along with using more vegetables to do your dipping.
Serve with fresh vegetables, pretzels or pita.
2 cans chickpeas, rinsed and drained
4 cups fresh spinach, packed
Juice of 3 limes
1/3 cup tahini
1 clove fresh garlic
½ cup packed, fresh cilantro leaves
2 tablespoons olive oil
¼ cup water (if needed)
1 teaspoon cumin
Salt and pepper to taste
- Combine all ingredients in a food processor until smooth.
