Bored with your breakfast usuals? Using veggies can be fun and delicious, not to mention nutritious.
Especially if you have plentiful produce from a CSA, breakfast is the perfect meal to use those vegetables. It’s usually the meal you’re going to prepare and eat at home (or just as you’re leaving home) anyway, right?
We’re not proposing a breakfast of vegetables, just with vegetables. And we find breakfast is best when it’s ready when you wake up, so these recipes can be made in bulk in advance. Which do you want to use as your vehicle for vegetables this week?
- Eggs: Include veggies in an omelet or scramble, or bake them into frittata muffins.
- Dough: Try veggies in breakfast pastries or pancakes.
- Fruit and milk: Hide vegetables in smoothies.
